Le Goût du Vin does not aim to carry the greatest number of references, but the right ones. Our selection brings together storied names — Romanée-Conti, Domaine Leflaive, Screaming Eagle — alongside far more confidential growers, each chosen with the same rigour. A famous label does not earn its place with us through reputation alone, and a lesser-known estate is not overlooked out of caution: what matters is the quality in the glass.
Our rigour begins with terroir. We favour wines that carry the mark of a precise place — a soil, an exposure, a climate — rather than those that blur their origins to please the greatest number. A wine that tells no story does not interest us, whether it costs twenty euros or two thousand.
We look for that same rigour in the growers themselves. Behind every bottle are women and men whose work deserves to be known. We favour a direct relationship with estates over a mere catalogue logic: it is this closeness that lets us uncover the small gems few merchants offer, alongside the most sought-after references.
Finally, our passion is renewed with every tasting. No reference enters our cellar without having been tasted and approved against consistent criteria: balance, precision, the capacity to evolve over time. This rigour, practised since 1991 in Saint-Barthélemy, is what allows us today to hold to a simple conviction: a selection is only as valuable as the rigour behind it, from the grandest cru to its most discreet gem.
The Faces of the House
Jennifer & François
For Jennifer, wine has always been about passing something on. She discovered this world as a young girl through one of her uncles, based in Puligny-Montrachet — an early encounter with the vineyard that soon grew into a calling. She trained in Montagne-Saint-Émilion with a BTS in Viticulture and Oenology, before completing her studies with a specialisation in sommellerie.
She then earned her stripes as a sommelier in some remarkable houses, including the Ritz Paris and later the Hôtel Le Toiny in Saint-Barthélemy. Wine has remained at the heart of her craft ever since, driven by the same desire to understand terroirs, meet the people who shape them, and pass that knowledge on in turn.
François came to wine by a different route: the restaurant trade. His path began in London in 2005 before taking him to Australia, where he spent several years managing restaurant teams. Through countless tastings, encounters and service, he sharpened his knowledge of wine and gradually developed his own palate.
Their meeting naturally brought these two paths together around a shared passion. Over the years, tastings, journeys through the vineyards and, above all, encounters with winemakers have shaped the way they choose wine. They look less for a label than for an emotion — less for renown than for a wine able to tell the story of its origin and of those who brought it to life.
It's this vision they now share every day at Le Goût du Vin in Saint-Barthélemy: a selection that is exacting yet never fixed, where great names sit alongside new discoveries, and where every bottle is chosen with the same curiosity.
Because behind every great bottle, there is, at heart, a terroir, a story and an encounter.
